    • Preparation

      To prepare an infusion of dried lemon zest, it is recommended to infuse them in hot water at a temperature of about 95°C (just before boiling) for 8 to 10 minutes. This infusion time allows the extraction of the zesty aromas, essential oils, and vitamin C from the zest, while maintaining a balanced flavor. You can adjust the duration according to your preferences, for a milder or more intense infusion.

      For a hot infusion,

      • Take 3g (about one teaspoon) per 30cl, infuse in water (ideally filtered) preheated to 95°C for about 8 to 10 minutes.
      • Water that is too hot or an infusion that is too long can significantly alter the original taste of your drink.

      For a cold infusion,

      • Also infuse 3g per 30cl of room temperature water for 60 to 90 minutes, or
      • Let it infuse overnight in your refrigerator to enjoy it the next day.
